It is above all thanks to the know-how of certified village cheese factories in the Gruyère district, in the rest of the canton of Friborg, in the cantons of Vaud, Neuchâtel, Jura and in some Bernese municipalities as well as a tradition transmitted from generation to generation that the Gruyère AOP retains its inimitable taste and impeccable quality.
The manufacture of the Gruyère AOP responds to a precise follow -up walk, each step of which is conscientiously applied by milk producers, cheese makers and refiners.
It all starts with the quality of white gold from which this concentrate of authentic flavors is developed. It is for this reason that the cows producing milk for the AOP gruyère are mainly nourished with natural fodder, fresh grass in summer, hay in winter, without any additives or silage.
Each milk producer delivers the precious ingredient to his cheese dairy, twice a day, in the morning and in the evening. The cheese maker and his art can therefore enter the scene, for our greatest taste pleasure!
